This high protein flour contains higher levels of gluten, which delivers increased water absorption rates and greater yields, as well as improved dough strength, stability, and baked volume. This makes it most suited for the manufacturing of bread, pizza bases, artisan bread, bagels and frozen products that are not baked in pans.
