FLOUR OF VERY FINE, UNIFORM PARTICLE SIZE, TREATED TO REDUCE THE GLUTEN STRENGTH.

This premium grade flour delivers cakes with a fine light texture due to its excellent colour and fine particle size, which makes it ideal for sponge cakes, swiss rolls, high ratio cakes, gateaux and lamingtons.

The gluten is denatured and the ph lowered to 5.2 via the use of chlorine gas.
